To brew it yourself you need a so-called Kombucha SCOBY (symbiotic culture of bacteria and yeast), plus a little starter tea from the last batch of Kombucha, black tea bags or loose tea, and sugar (for 1 litre or a quart about 1/4 to 1/2 cup or 50g to 100g). To get a super healthy elexir you can add a little of our Enzyme drinks.
First you prepare the tea. Boil the water, stir in the sugar, drop in the tea bags and allow it to steep about 20 min. For one litre or a quart you need 4g -10g (about 2 - 3 tablespoons).
Now you let the tea cool down to room temperatur. In the meantime, take the Kombucha SCOBY out of the refrigerator. Both, the tea and the SCOBY should have room temperatur.
After pouring the cool tea into a glass jar, you add the SCOBY and the starter tea. Cover the jar with a kitchen towel and a rubber band.
After a few days or a week, depending on the temperatur, you will see a thin layer growing on the surface. A new SCOBY is growing.
Look! A new Kombucha SCOBY has developed. Now we have two SCOBYS, and we can brew the double amount of Kombucha tea.
Important: Always save about 10-20% of the last batch as starter tea for the new Kombucha.
This time I had the desire to create something different. An entirely new taste. I am very curious about the result. I prepared 4 liters (1 gallon) of tea with the following ingredients: 100 g (3,5 oz) ginger, a big bunch of lemon balm, 2 lemons and 2 nectarines. Ginger and nectarines are warming, lemons and lemon balm are cooling. The tea is very delicious. Let’s see if my Kombucha Scoby likes it as well.
